The Unparalleled Health Benefits of Coconut Oil

Recently I opened a brand new container of Tropical Traditions Organic Coconut Oil, and I have to say I was not disappointed. It’s flavor, texture, and aroma are unlike other coconut oils I’ve tried. Lime Cumin Sauce

Ingredients:

  • 1 teaspoon lime zest
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon of sea salt
  • 1 dash of Tabasco sauce, to taste
  • 3 tablespoons of extra-virgin coconut oil
  • 1/4 cup of minced red onion
  1. Whisk first 4 ingredients of lime cumin sauce (pepper sauce to taste) in a small bowl. Whisk in extra virgin coconut oil until smooth; stir in onion
  2. Serve immediately

Serves 4

Can be used on meats or as a dressing for salad

Coconut Chicken Salad

Ingredients:

  • 2 chicken breasts
  • 1/4 cup unsweetened, raw coconut flakes
  • 1/4 cup ground almonds
  • 1/4 cup ground flax seeds
  • 1 pasture-raised egg, beaten
  • 2 tablespoons extra virgin coconut oil
  • 4 cups mixed greens

Directions:

  1. Rinse chicken and pat dry. Cut chicken into strips and set aside.
  2. Mix coconut flakes and ground almonds together on dinner plate. In medium bowl, beat egg. Dip chicken strips in egg and roll each strip in coconut-flax mixture.
  3. Heat oil in pan and saute chicken strips until completely opaque through center.
  4. Serve over bed of mixed greens with lemon-olive oil dressing or your favorite vinaigrette. Optional – garnish with red onions slices and lime wedges.

Note: You can make a nice, healthy dressing with a good extra-virgin olive oil, your favorite vinegar (I like balsamic!), or lemon and lime juice, salt and pepper to taste. Use a 2:1 ratio of oil to vinegar. Whisk together in a small bowl.

    I LOVE coconut oil, though I mostly buy it from Nutiva. It’s phenomenal for cooking, baking and, of course, personal care. The chicken salad recipe looks amazing!

    Great information! I love coconut oil and use it as a sauce for almost all of my meals. I even sometimes put it in my water when I play tennis. I haven’t tried Tropical Traditions – I usually buy it in 1 gallon buckets from Mountain Rose Herbs. I’ve found that’s the cheapest way.

    I have tried Nutiva and really like their coconut oil, also Beyond Organic (which is also a really great brand as well), but not Mountain Rose Herbs yet. I’ll have to try it. The Tropical Traditions is really a good brand, and I like that they are a family-based company that produces their oil the old-fashioned way in small batches (I think that’s what accounts for the distinctive taste). They are very also mindful of many things I agree with, such as good overall nutrition through grass-fed meats, etc. (they talk about this on their about page). They sell chickens who are pasture-raised and eat Coco feed (a natural feed that is coconut-based with NO soy). Go read about it, it’s really interesting and compelling information…http://www.cocofeed.com/cocofeed.htm – on the about page they talk about using the Salatin-type of movable pens for their chickens (as in Joel Salatin)…which I think is so unbelievably cool!

    That chicken salad recipe loos fantastic. I just made a traditional chicken salad yesterday afternoon with grapes, pecans, sour cream, & homemade lacto-fermented dill pickle relish. But coconut! WOW. I wonder how it would taste to be coconut & curried! Ah, chicken salad inspires me.

    Who knew coconut oil could do all that? I mix it with shea butter as a face cream, put it in smoothies, and replace some butter in recipes with it. Or eat straight from the jar to fight off flu or promote weight loss.

    Yes! It is good for all of those uses. It is really one of the most versatile oils around. And if you are insistent on being a vegetarian, you can at least get some of the good benefit of coconut oil (and pasture-raised eggs and dairy for that matter) in your diet. Now that’s smart health.
